Amazing how quickly the first year of AIMC has flew by. It seems like yesterday when I first started, anxious and nervous about starting at AIMC and now it feels like a second home.

Our organic plum tree had more plums than ever before so after I gave away what I could to my neighbors, I decided to make plum butter! It is still cooking and I am not adding but a bit of organic sugar because my husband is a diabetic. So we will see how this does. I have about six quarts right now and it will lose about a quart of fluid by the time it cooks down.
